Throw all ingredients in Vitamix or high-speed blender. Start on lowest setting and gradually increase speed to high. Blend for two minutes or until silky smooth. Add a little more almond or coconut milk if necessary.
Chill for at least one hour and garnish with dark chocolate shavings if desired.

-Make it while the kids are sleeping or out of the house so they won't keep asking if it's ready yet while it chills.
-Because the dates and nuts supply a good amount of fiber, I've found that this pudding has helped my kiddos stay "regular".
-It will stay fresh for up to two days in the fridge (if it lasts that long).
