healthy vegan chocolate pudding

Healthy Chocolate Pudding (Dairy-free, Kid-friendly)

Ingredients

  • 1 cup unsweetened almond or coconut milk
  • 1 ripe avocado, seeded and halved
  • 2 dates (medjool dates work well)
  • 1/4 cup raw cacao (regular cocoa powder can also be used)
  • 1/3 cup raw unsalted cashews
  • 1 tbsp coconut oil (no need to melt)
  • 2 tbsp raw honey or maple syrup (may also do 1 Tbsp. honey + 5 drops Stevia extract)
  • 1 tsp vanilla extract
  • Dash of sea salt

Instructions

  1. Throw all ingredients in Vitamix or high-speed blender. Start on lowest setting and gradually increase speed to high. Blend for two minutes or until silky smooth. Add a little more almond or coconut milk if necessary.

  2. Chill for at least one hour and garnish with dark chocolate shavings if desired.

Recipe Notes

Pro mom tips:

-Make it  while the kids are sleeping or out of the house so they won't keep asking if it's ready yet while it chills.

-Because the dates and nuts supply a good amount of fiber, I've found that this pudding has helped my kiddos stay "regular".

-It will stay fresh for up to two days in the fridge (if it lasts that long).
